Mexican food is from Mexico (usually central Mexico/Oaxaca), Tex-Mex is northern Mexican food as interpreted by Texans..

Worth noting that Mission burritos (Chipotle/Baja Fresh/etc) are none of the above, they are a San Francisco Chicano thing.
