If I understand it correctly, you want to have a 24 hour connection somewhere in Europe, before your 24 hour connection in Istanbul? That would make sense, yet it appears you are looking for only 12 hours in IST Given this:

Istanbul is great and worth more than 24 hours. Turkish Airlines is also great so I'd probably skip Europe. But in your post it sounds like you haven't been to any of the place you reference. If thats the case, anywhere is fun for 24 hours -- but I'd give it 24 hours. Fly EWR-XXX and land in the morning, ideally later. I'd probably put AMS, CDG, LHR, FCO, BCN and MAD at the top of my list of places I can fly nonstop from EWR and then onto IST where 24 hours would be easy to kill. But again almost anywhere -- BRU, DUB, DUS, ZRH -- would be a fine place to make this stopover, er, connection.
Don't forget you if you need to add in an additional connection (EWR-FRA-AMS or AMS-MUC-IST for example) to get your arrival times worked out within a 24 hour window, that can happen too.
