My rule of thumb is to allow a minimum of four hours when "connecting" on separate tickets... and I've had people tell me that four hours isn't enough.

On this particular itinerary you have to

- queue for Immigration
- wait for your bag (baggage retrieval can be painfully slow at AMS)
- queue for bag drop
- queue for outbound passport control
- queue for security

Do-able (just) if your inbound flight is on time, and Easyjet is generally no less reliable than other European carriers... but I would take the earlier flight. There are just too many queues!
