Odd to pick on Starbucks when they appear to be the exception. And I think they are imposing American habits (or trying to) and I don't think they get a lot of customers at that hour. It's probably busier at 2 am than 7 am.
I happened to know that my former local Staabaa, which was across from Bunkamura in Shibuya, opened at 7 am. Not because I ever set foot in there but because I was trying to catch a train or bus to NRT in the morning. I noted one or two grim looking foreigners sitting there nursing their concoctions. Everything else (unless it is 24/7) is closed at that hour. Shibuya is particularly eerie at that hour will piles of trash and the over-sized crows picking away at the leftovers.

My main complaint was that bakeries opened at 10 am. In my area Viron opened at 9 am and the best of them all, Levain, at 8 am. But at that hour Levain did not have the good stuff. The European concept of a baker arriving at 3 am to start the day has not taken hold.
