The main reason why all the segments must be booked in those specific order is because my family and I want to go on tours in those countries. The tours start on set dates so we must enter one tour then exit the country to another tour that will start the next day. This way we don't have to waste vacation days hanging around waiting for next tour to begin. So just trying to maximize the days we have as our vacation days are limited.
Also, is it better to depart Japan from KIX rather than Osaka( itm) to next destination TPE, as the Japan tour starts from Toyko (Nrt) but tour ends and departs from Osaka (assuming it's from item airport).

The main reason to my suggestion of 2 step booking is trying to avoid having the 2nd stopover and the OJ at the same time. This "equal segment change" works before if you dig into this thread and I think it should still work.
Regarding to ITM, its actually solely a domestic airport of Osaka. If you want to have ITM-TPE, then you must connect in some other city in Japan including Tokyo that can be a problem. That's why I suggest you take KIX-TPE nonstop to avoid the trouble. BR has 2 or 3 daily flight for KIX-TPE so it shouldn't be hard to get. Opt KIX over ITM is simply meant to make the booking done since the nonstop flight is the key to make the fore mentioned "equal segment change" work.
Its hard to say your local tour will ends at ITM or KIX. But if it says "Osaka International Airport" then it is ITM, KIX will be "Kansai International Airport". Local transportation can take up to 2 hours between ITM and KIX but is definitely not a hassle. Do check
