No. I think the risk is basically zero. The 737-700s used to fly all the transcons, but that was before AS had so many -800s and -900s in the fleet. Nowdays it is extremely low risk, since the -700 only seats 124 (compared to 163 and 181 on the -800 and -900 respectively). The flight would basically have to be super empty before an equip downgrade would even be feasible.
Granted this happened many years ago, but my wife and I were once downsized out of row 4 on MIA-SEA due to an aircraft swap to a 700. After that day I NEVER book row 4 unless it's the last one left.
