Well, a friend was called by AMEX on exactly that. He readily told the rep that because the card earns bonus at grocery store versus only 1x at other places so he buy the GCs to use at other places.

AMEX rep actually agreed on that upon looking on the earning structure, and told friend that he was done reviewing his card and friend was good to go.

Myself, got a call from Chase on Ink and told the guy I had a trip coming up that could use some UR pts so I brought up the future spend to present. Guy had no more question.

I felt you can tell the truth, in a tactical way and that would be far better to make up an unbelievable story. Dont fool yourself when the bank calls that it does not know what you are doing. They know, they just want to gauge your reaction - telling a bad lie is much worse than telling some of the truth.
