Trains in Ireland

We are planning to go to Ireland in August and would like to fly in to Dublin and out of Shannon (or vice versa). Along the way, we want to explore a couple of other towns. Difficulty: We have a toddler, and want to do this without a car (or taxi, if possible) to avoid the need for carrying a carseat. How much could we reasonably cover this way, or are we better off just sticking to Dublin?
