We're in Tokyo for 7 nights... and 4 more weeks covering the rest of Honshu - or most of it anyway! I don't consider 2-3 sushi meals in Tokyo overkill considering the length of our trip, the relatively poor quality of sushi in Northern California, and the fact that we'll be in a city with arguably the best sushi offerings in the world. We actually won't be eating sushi all that much elsewhere. I think we possibly have one or two other spots on our radar in other prefectures, but we'll be splitting up our stay in Tokyo with several nights in Hakone so the meals won't be so concentrated. I'm interested to compare the different styles... and just to indulge!
Considering the length of your trip - your dining plans sound ^ (didn't realize your trip was so long).
2 places I enjoyed that you might check out are Ippoh Tokyo (tempura). It was located on one of the restaurant floors at Barneys New York in Ginza. Another was Maisen (tonkatsu). On a back street a few blocks from Omotesando Hills (but easy to find).

Maisen is conveniently located near Senso-Ji (Shinto shrine) and Harajuku/Takeshita Dori (small street where kids dress up in unusual garb). Best day to visit is Sunday - when there are often lots of wedding processions at the shrine and the kids are out of school. After lunch at Maisen - you can explore the stores in the area (it's a very upscale shopping district). Robyn
