Presumably the boarding music is played to affect passengers moods and more importantly to encourage them to board quickly. As mentioned above, adult contemporary is likely to be innocuous and not annoy many customers while very slow music could cause people to move more slowly during boarding. I suspect the "research" shows that such music correlates with quicker boarding times compared to no music at all.
