I don't think anyone saying that service is an ”issue" with AC. It is what it is, and changes with every flight. And is all based on personal opinions.

As an experiment, get yourself on an AC flight in Y without status, then compare

I was actually talking about flying various other *A and OW airlines in J - or at least in Y with status (since I happen to have both AC SE and AA EXP status). And I honestly have no desire to fly any airline in Y without status.

Flying Y (without any status) is a rather miserable experience on most airlines.
But if I compare apples to apples (e.g. J vs. J and Y with status vs. Y with status) I honestly can't think of many airlines outside Asia that are
consistently better than AC.
And we'll have to agree to disagree whether AC is "mediocre on a global level" - having flown many airlines (incl. 150k BIS miles on non-AC flights last year alone) I just don't happen to agree with that statement.
