This is the way to go. Airport Express check-in will not accept your bag for the next day and the DL counter there won't even by open by the time you make it to Hong Kong station nor will the DL counter at the airport take your bag that early even if it's still open for those cutting it close on the HKG-SEA flight. No way for you to check your bag early in this scenario.
