I'll put in another plug for the Friday evening outdoor live music, Sandia sunset, great reasonable wine, and tons of hummingbirds at the Prairie Star. Just before the Casino from the resort. 5:30-8:30. If you get there early enough before the locals you can get a table that is positioned just right to have a good view of the band, sandia, and the feeders.
