Isn't the A321 transcon service a three class aircraft aka useless for TP-running?
I'm not sure I understand the complete route Windsor001 wants to do, but if you are based in the UK, I would aim for a ex-EU-HNL via LCY-JFK and then a nested run HNL-SJU, stop there and go up to MIA to visit your friends and then go back the same way.
That should net you close to 3k TP if done right. And if booked during a sale, you should be close to £1/TP.
