Galleys are used for serving food/drinks. With little to offer in terms of food and beverages, the need for galley space decreases. The -700 is the smaller of the 737s (fewer seats, fewer pax to serve), so they could potentially remove the galley either at the front or at the back of the plane and rely on just one. If they remove the one at the back to add more seats, it's possible that the second row can only fit 2-2 (as opposed to 3-3) due to the fuselage being narrower.
