If you book A->X->B with intent of getting off at X, but the airline cancels one segment and automatically rebooks you to A->Y->B (different connection) or A->B (non-stop), then you won't be able to get to X, in addition to whatever airline penalties you may encounter if the airline dislikes hidden city ticketing.
