It would work only if it is a one-way ticket. If it is a return (roundtrip) ticket, the remaining portion (the return) would be canceled. It is only safe to skip the last segment of a multi-segment ticket.

You would also need to avoid checking baggage and go with carry-on only as any checked bags will continue on to the end destination.
