What meal is served is usually based on time in departure city. Its only 1 meal at the beginning of the flight + maybe a snack basket later on depending on airline. Now if we are talking about US flights meal is not served in coach only First/Business. The exact timing cut off between the different airlines can vary. Red-eye flights can vary vastly between carriers from substantial to light meal

On longer international flights they serve a second meal upon landing, usually the opposite meal. Dinner at departure and Breakfast at landing, or Brunch upon take off followed by lighter dinner upon arrival.
