I'm a bit confused by your message. If your question is "which airline has the better seat and service between AC, LX and LH in business?", then probably in that order.
I think fewer connections are always the best choice, so YOW-YYZ-MAD (or YUL or whatever hub AC has) is your best bet. Using LX and LH would add at least one more connection (and for the love of god avoid LHR), for a marginally different experience.
