The standard to evacuate an airplane is 90seconds. If it took 15 more seconds due to one less Flight Attendant, that represents a 25% increase. I'd argue that is less safe.
If AC (with subsidiaries) has apx. 350 aircraft that is probably around 1200 flights per day (some aircraft do 10 flights per day, others 1 so I'm averaging 4 per day). A 'true' emergency evacuation happens maybe once or twice per year across all airlines so lets say 1/10 years as a an unlikely high probability, that's (1200*365*10) around 1 flight in 4,380,000 of all AC flights. Not just the one that you are on.
How much more per flight are you willing to pay more for the 15 seconds with these odds? Especially since if you are on AA, UA, DL, LH, LX, BA, WS, etc. etc. etc. etc. etc. you won't have the (supposed) 15 seconds?
