Since DFW-HKG is only once a day, I'm leaning towards the former.. any input would be appreciated.
Eastbound flights often make up time in the air, so there's a chance you might actually get in early. But it all depends on your risk tolerance. I personally avoid booking such tight connections for international flights, but you might be different.

That being said, the LAX-DFW red-eye is miserable.
