Other question, I believe I saw somewhere that you are allowed one stopover for a full day that would count as a layover and wouldn't cost more points? If someone can provide guidance on that it'd be appreciated.

Well, if you don't mind paying the $410/person scamcharges, you can get 2 seats in business on the non-stop FCO-YYZ AC flight for your return date.

Going is the challenge. I'm with run&fly, look at cities other than Venice and take the train. Milan, Bologna, Rome, even Zurich are possibilities.
