In August, I would fly DL from ATL-JFK and JFK-CPH. There is a good connection, arriving in CPH just before 11 AM, and not having to make a connecting flight in Europe after the overnighter. That way you avoid both AMS and CDG.
The only downside to this from my perspective is that I find the 752 which DL uses for JFK-CPH to be noticeably less comfortable than the A330 or 767.
