The Dubai Museum is really well done and provides an interesting insight to the history of the emirate. Easy to combine with a visit to the old souq along Dubai Creek.
Also in the same area is the Sheikh Mohammed Centre for Cultural Understanding. Check their website; they offer cultural meals as well as walking tours. Highly recommended.
My son and I were in Dubai a couple of months ago. Some comments on your list of attractions:
Ski Dubai - We visited the Mall of the Emirates and watched the action through the windows for a while. Meh, it's ok, once.
Dubai Mall - A shopping mall on steroids with probably the biggest food court we've ever seen. There is an indoor Sega amusement park that is similar to the one we visited in Tokyo. Across the way from Sega is a place where you can rent time in a 737 simulator. Also near Sega is the new Emirates airline shop...very, very cool.
Jumeirah Beach - Saw it from the entrance to the Burj al Arab. Looked nice. Was told that the seawater temperature easily exceeds 90 degrees F in the summer. So probably not a place where one can cool off from the brutal heat and humidity of summer.
Dubai Creek - Ride the traditional abra passenger ferry across the creek. Best bargain in the city at only one dirham per person.
Dubai Marina - Didn't visit.
Wild Wadi - Didn't visit; have waterparks at home.
Burj al Arab - Went here for the Culinary Flight luncheon (check their website). You can only get into the property if you have some kind of room or dining/bar reservation.
Atlantis: The Palm - Saw it way off in the distance from the top of the Burj al Arab while at lunch. Looks just like the one in the Bahamas.
Burj Khalifa - Still haven't been to the top even after two trips to Dubai. Mostly because it was hazy the times we were there plus it is fairly expensive if you don't make an advance reservation/prepay ticket. Easy to combine with a visit to the Dubai Mall.
Dubai Fountains - The Dubai version of the fountains at Bellagio Las Vegas albeit on steroids. Nice to see, once.
