Correct. Technically you can just get the ticket once you arrive HK station or Kowloon station as there is no need to present the ticket in HKIA.
So, there are 3 possible ticketing places as far as I can remember. Just right after baggage claim, another counter just before the train and at the destination station.
I did buy the voucher in flight CX flight and also the local SIM Card. I was quite lucky there is no queue at the counter just after the baggage claim. so I just exchanged it there.
I notice this counter, normally is not so busy, at most I only need to queue about 5 min (if I have to) compare to the super long queue at the counter before the train.
Another option get an Octopus card and load it with money. So no need to buy separate ticket, if receipt is not an issue for you.
