I think you've got your answers! I think you'll want a car to explore a little around Germany, and this makes more sense than a train, especially with children. Unless you find a good price to drop off in AMS (and Sixt is an excellent suggestion) I recommend you drop the car off in Düsseldorf or Cologne and take the train from there. It's fast, direct, and hassle free.
