I'd suggest you look at flying SK from IAD to CPH. You might be able to create YYZ-IAD-CPH-KEF as a valid route. Another alternative would be to just purchase a fare on FI once you're in Europe. Many FI fares are surprisingly affordable.
Yeah, after I posted and stopped being stupid, the most "cost effective" way is almost certainly FI from YYZ -> KEF. Can be done for <$600 in some dates at the moment, and that's not even really looking for sales/deals. Aeroplan would be 75,000 points in Y (only thing I'd fly), so totally not worth it.
Good to hear about Iceland. Thinking of taking a week or two to explore Iceland to sometime late/summer or early autumn to celebrate my birthday.
