FWIW, it's been my experience that the bus in Nürnberg will generally wait for connecting passengers if the incoming ICE is a few minutes late. 11 minutes is a little tight, but doable; I've had time to use the men's room and grab a döner without having to run.

That said, I agree with the recommendation to take the slightly slower direct ALX train if the scheduling works.
