When a room is booked for 2, the hotel has no way, in advance, of knowing who you're going to show up with. It could be your wife, husband, a family member, a hooker from down the street, or an imaginary girlfriend.

And that's exactly why they shouldn't be using a standard Mr. and Mrs. It's very short-sighted, and not limited to an GLBTXYZ issue. Why not just use the names in the reservations, without any titles? Adam Doe and Steve Doe, welcome to our hotel.
