Go to the store and they tell me if I don't have a voice plan with them (which I wouldn't since I'm only getting data under the mobile Internet page on their site, I couldn't get Simple Choice plan.

I'd have to get Simple Global plan, which only offers data in 100 countries instead of 120, and I'd be subject to roaming charges, like $15/MB.

Why can't I get a straight story? These people must all work on commissions and use some kind of sliding price scale. The phone rep wanted to run a credit check, to get me the best plan. Told her I only wanted 1 GB a month.
The stores are giving you bad information. I checked out the options on the website, and it seems like you want the "Simple Choice Mobile Internet 1 GB - 2014 promotional plan". There is a waived $35 activation fee, but I thought T-Mobile hadn't been charging activation fees for awhile. Finally, as you were quoted, the SIM card price is $10. The website seems to indicate you could change from a prepaid to postpaid plan:

Can I switch from a prepaid plan to a postpaid monthly plan?

A: Yes. You must pass a credit history evaluation, select your new plan, and agree to the terms of your new plan. If you are interested in converting to a postpaid account, please call Customer Care for additional details.
Whether or not you could get a sales rep to make the switch without coughing up $10 for a new SIM card is another story. I would suggest going into the store, but it seems like they're of no help. As long as you're on the Simple Choice plan, you'll have the same data roaming available to the voice customers. I'd probably pay the $10 and do the purchase through the T-Mobile website.
