If you check the top 30 Beijing hotels on Trip advisor there are numerous 'hutong' style hotels available but I wouldn't be able to give a recommendation on them.
The Temple Hotel and Restaurant seems to be the flavour of the day at the moment with the expat meejia and chattering classes.
If you REALLY fancy something a bit different then you could visit Crab Island (Xiedao) which is about 10 minutes from the airport. It is a vast holiday resort complex with several different accommodations including one themed around what you seem to be looking for.
It is pretty run down as most Chinese enterprises of this ilk wont to do but it is worth seeing just for the experience. They have a huge BBQ area open in the evening with their own micro brewery and hilariously bad entertainment at ear piercing levels which made up for all its shortfalls in my view
Unless you can speak Chinese or have a translator with you, it could be a bit of an ordeal however, as the resort is about 40 acres in size or something daft like that!
