It was seemingly understood that because they had paid less money for their tickets, they had to accept the longer waits - even if the carts were in the aisle.

Perhaps the current more relaxed approach is the inevitable result of years of free upgrades combined with the ongoing homogenization of the domestic air travel experience.
I remember those days as well...a coach passenger wouldn't dream of going to the front. It just wasn't done. I've wondered as well as to why things have changed in that regard. Part of it is that planes are fuller...in those days a 50-75% load factor was the norm. Another might be that people with status that are forced to Y still feel entitled to come forward to use the FC lav. Another could be the degradation of manners and decorum in today's culture. I might be old school but if I'm in coach I'd never go up to use the FC lav.
