Off the top of my head:

-Opposite House
-Parkview Green (the hotel itself has a different name, and is part of a small chain)
-Hotel G
-Emperor Hotel (really nice roof top overlooking the Forbidden City, though no elevators)
-Beijing Hotel (not nearly as nice as its prices would suggest, but there is a lot of history surrounding it)

You might also want to research some of the 四合院 style properties around Gulou, but be warned that the pollution (dust, in particular) is a huge drawback.
