I've flown coach on Etihad and it seemed that the flying nanny was mainly there for most of the flight (ORD-AUH) and she basically helped set up bassinets, hand out the children's meals, and later do face painting and finger painting with kids. there were TONS of kids on the flight as there are on most AUH-USA flights. I'd say don't expect that this nanny will be there to devote an excessive amount of time just to your wife and children. The nanny is for the whole plane and will be spread thin.

My wife and two kids are flying from ISB to JFK next weekend, and my wife could use all the help she can get, especially with the little one.
