This is fine, as long as long as all flights in question are nonstop to/from SHA and VN/US. (Additional stops in the PRC won't necessarily invalidate your itin, but they will trigger the 24 maximum on the transits in question.)

In response to the bolded part of your post, airsdide transists are no different from landside transits.
