Just looking at the terms on conditions on here - see "Companion Voucher Terms and Conditions" half way down this page, it says under point 15:

All Taxes, Fees & Charges must be paid for using the Member’s British Airways American Express Credit Card.
I don't know if this is one of those things that is enforced though. Hopefully someone will advise whether you have to use your BAPP, or can use any other Amex card, or can even use any other card.

I assume you want to use the Amex GC to hit a promotion spend target or to get membership rewards points. If you use your BAPP though you get 3 avios points per pound with your BAPP for BA spend, and this would include any fees and taxes paid when making a booking using your companion voucher - sorry if you know this already.
