The problem isn't checking in online, it's dropping off my luggage before being able to go past security.
I know you can check in a month in advance and will check-in before I leave for my trip to be on ths safe side.

Sorry, I think I was the one not being clear enough!
According to the link above, easyJet will let you drop your luggage at any time after 8pm the previous day. It also implies the desk is open through the night, although I can't confirm this...
