Traffic on the Sunday will indeed be better than the Saturday, and coming back on Tuesday will be better than Monday.
The weekend GO train runs out of the Falls until the holiday Monday (schedules are online); Tuesdays it's back to the GO bus only.
If you both have Nexus you can use the Whirlpool Bridge to go cross-border shopping. That bridge is only open 7 am till 11 pm, not overnight. Toll is paid by putting money on your Nexus card on the US side.
