As of now, you only have Cabo and Cancun as all-inclusive options through Hyatt. I have a 3-night stay booked on points for my wife and I over the summer in Cabo, and from what I've read you can definitely use those credit card free nights there too. Keep in mind that the Cabo property is family-friendly, and the Cancun property is adults-only...in case that makes a difference for you.

Oh, and the free nights from the credit card cover two adults in the room at those AI hotels.
