Time would be my concern.
Your transfer will in any event require you to go from T3 to T1 and clear immigration and security there. You can do this using the transfer bus if you don't have to do anything with your bag. But if you add in the time needed to exit to landside, collect the bag (which can take a little while) and then use the train to get over to T1 before joining a check-in queue there, you could be short of time - even before you factor in possible delays to the ASP-SYD flight.
