If you get the chance, do try the Old y Plus Sherry on IB. I agree that IB's J catering is quite sub-par especially compared to my recent experience on OS where it was superb.
IB generally offers some better wines all around, the sherry included, IMO. And some time to savour the Rincón del Vino in the Velázquez lounge can be worthwhile too, though AA or IB will both work for that.
