I suppose it could've been dropped off at a chop shop right away, but those valets on duty at the time should be aware that they're now right in the crosshairs of the police.
The OP will certainly comment on this, but if there was an unclaimed car with the same make/color under the valet supervision, it would have been pretty easy to get in touch with the other party.
Good thing Hertz is taking a no-nonsense approach and going after the valet, not the OP.
