So, my experience is, just ask those big chain hotels to turn DCC off before swiping, and if fails at last, settle with a UnionPay card instead (or Discover).
For those that haven't read all the threads - Discover runs on the Union Pay system so will always work in China.

As for the hotel thing, the problem is when the hotel employees don't know.
