I had some options with similar timings going LAS-JFK-LHR in three weeks time and in the end, I went for what is more or less your option two. It allows for a late inbound flight and time to get from T8 to T7 and re-clear security. It gives you plenty of time to enjoy the lounges and have some dinner before settling down on board at what would be considered a normal time to go to sleep.
