If the flight out is from CDG at 11am, you'll be leaving the hotel at 8am on the second day, so not much touring that day. If the hotel happens to be full, your room may not be available until 4pm. I don't think you will get much benefit from the hotel room you are paying for, nor will you see much of Paris.

I wouldn't even try to get into the Louvre or any other large museum, it's too time consuming. A few weeks ago I was in Paris waiting in line for the Musee D'Orsay. You have to wait in a long line for a cursory security check outside the famous museums, a check that is clearly just there to provide employment for some guards. At noon, they closed the security check and let us all stand there for 15-20 minutes while they took a break, welcome to France!
