I have occasionally used a travel site called Yapta (www.yapta.com). They send flight price and availability alerts, and I believe they do hotel rooms too, although I have not used it for that. On the flight alerts it will sometimes send alerts that are not lower, so it can get annoying. I think the service is more geared toward price alerts than availability, but you might see if it does what you need.
