With an infant you can stay anywhere along the corridor and not have to worry about partyers. The only place I would not stay is something in the center of Cabo San Lucas though we have never hesitate to walk around there at night but you do get the booming music from all the bars.
Villa Estancia is a great property, we always stay in Villa del Arcos which is the timeshare property adjacent. Very quiet and family oriented. You will not need a car here or to get into town.
If you do have a car then really any property along the corridor is fine - just consider you will have more driving to get to restaurants in town.
Read the reviews on tripadvisor - you can easily tell which hotels are party places and which are not. All inclusive is a bad sign as that usually gets the heavy drinkers.
