Last fall I had the vegetarian in BE. I was surprised that it was primarily vegan anyway.
US-Europe - First course dinner was couscous-like dish, zucchini and asparagus drizzled with balsamic, and some lentils. Then spinach salad with fruit. Main course was mushroom tagliatelle.
Breakfast was fruit and bagel to start. Second course was egg white omelet with spinach and potatoes.
Europe-US - First course was veg plate with asparagus, mushrooms, and peppers, with some other sides like olives. Then salad with tons of veggies. Main course was rice with tofu/red sauce and some other veg on side.
Overall, the food was surprisingly good. Worst parts were breakfast in that I would have rather just had the usual BE options. The egg-white omelet was almost inedible. The best were the dinner main courses - if restaurant food I would return.
