Airlines aren't known for micro-managing meal service to that level. Yes, you'll see country-specific treats or dishes show up on international, but a different menu for DTW-LAS than say DTW-PDX or DTW-SFO? Not buyin' it.
They may not change the food, but they do give certain routes meals that would not normally qualify based on time/distance, such as LGA-ATL. When there is more competition they do seem able to respond on specific routes.
