This sounds like a nice plan. I'm not sure if the Albert Cuyp is open at Koningsdag(King's Day), it is closed at that Sunday for sure. It's a Dutch tradition to have a Vrijmarkt("Free market") at Koningsdag, people sell pretty much everything you can think of and the market is spread around the city, in for example the Vondelpark.
I don't see really problems in the day tours, they seem to be okay. I got a slight favour for itinerary 1.
